12 Sep Lentil, chickpea and coconut curry
When I’m down I tend to go for comfort foods, things like a pot of pasta, chips, you know what I’m talking about right? Today I wanted that. I wanted to order in pizza and coke, I wanted to just sit and eat and be alone. But I always hate myself after it and I’m tired of myself hating myself. The kitchen is pretty bare, I had planned on going shopping today but I got 3 hours max sleep last night which doesn’t help the emotional exhaustion so I’m not going anywhere which means I scavenged the cupboards and looked at what I had.
Usually Pinterest is a horrible place, it sucks me in all the time and I get lost in it and time just disappears. Today though it was helpful, I typed in chickpea’s and lentils and came up with a bunch of ideas until I found one. I had to switch out a few ingredients for alternatives because I didn’t have things like garlic cloves or yellow curry paste.
But as far as comfort food goes? This is by far the best. It’s healthy, filling, tasty as fuck and I don’t feel like I should hate myself :)
1/2 cup lentils
1 can drained chickpeas
1 can coconut milk
good whack of crushed garlic
1 tsp garham masala
2 onions thinly sliced
salt pepper to taste
chopped bell pepper
2 tbs nut butter
Use coconut oil and fry the onions and garlic. Then moer everything into the pot and leave on 3 for 20 minutes.
Fysh and I ate it just like that, though I’m sure it would be tasty if you make rice with it if you don’t mind the extra carbs. It would also make it stretch further, this made two big bowls for each of us but with rice you could easily make 4 or 5 servings from it.
Next time though I’ll add spinach to it as well and maybe some cauliflower :)
