09 Dec my ouma’s recipe – soetkoekies
It’s tradition for us to make biscuits for the holidays as a way to keep busy and out of trouble mostly I think, been doing it since I was a little kid so of course I keep up the tradition with Fysh as well cause it’s a great one. And also it’s a cheap teachers gift as well as family xmas gift if I let him decorate it ;)
This year I thought I’d share the recipe we always use…
5 koppies koekmeel
Klits botter en suiker tot romerig. Voeg eiers by en klits goed. Sif droë bestanddele saam en voeg by eiermengsel. Knie liggies tot ‘n deeg. Laat staan in yskas vir so half uur. As jy vind jou deeg is bietjie klam, gooi so bietjie meel by tot lekker stywe deeg is.
Rol deeg baie dun uit en druk vorms uit. Bak by 190 grade C tot ligbruin. So ongeveer 8 na 10 min of tot mooi ligbruin
And just in case you don’t read Afrikaans… I translated it for you. Cause I’m thoughtful like that ;)
5 cups cake flour
5ml baking soda
25ml baking powder
Preheat the oven to 190 degrees.
Mix the butter and sugar together till creamy. Add eggs and mix really well. Sift in the dry ingredients with the egg and butter mixture. Kneed lightly till it forms a dough. Let it stand in the fridge for about half an hour. If it’s a little sticky just add some more flour till it’s nice and stiff and not sticky.
Roll dough out really thin and cut out in whatever shapes you want. Add a sprinkle of sugar or vermicelli or hundreds and thousands. Bake for about 8 to 10 minutes or till light brown.
Some fun variations:
Cut out the shape then use a smaller shape cutter to cut out the inside. Pop the biscuit with the “window” on a baking sheet and then put a sparkle sweet in the centre. When it’s in the oven the sweet will melt and it will make the cookie look like it has a colourful glass window :)
Or top with frosting and sprinkles
Or add in some oats and wedge with peanut butter or nutella or frosting
